The Taste of Change. Sustainability Transitions in the Danish Agri-Food Landscape

Since more than a third of the global greenhouse emissions come from the food we eat, changing the food system towards sustainable production, distribution and consumption becomes more and more important. If we want to mitigate the effects of the environmental crisis, we need to change our eating habits. But what measures need to be taken to create sustainable food ecosystems? To examine this question, the research seminar brings together UCPH scholars across the disciplines. As a keynote speaker, Susanne Højlund, Director of “FOCUS, Center for Food Culture Studies” at Aarhus University, will join us to share her expertise on food-and-culture research in Denmark.
